Preparation step 1 (Sambar masala )
Oil – 2 teaspoons
Channa dal – 2 tablespoons
Fenugreek seeds – 1 teaspoon
Coriander seeds -1 tablespoon
Curry leaves – 1 sprig
Dry red chillies – 5 nos (To your taste)
Asafoetida – 1/4 teaspoon
Coconut – 1/4 cup
Roast the above ingredients and grind it to a smooth paste with some water.

Preparation step 2 (Cook the dal)
Pressure cook 1/2 cup of toor dal with 2 glasses of water foe 4-5 whistles.

Preparation step 3 (Tamarind puree)
Take Small lemon sized tamarind , soak it in a glass of water and make it into a puree.

Preparation step 4 (Cook the vegetables)
Chop and cook Drumsticks – 2 nos . Cook till the drumsticks turn soft.
We can also use Red pumkin , Brinjal, Potatoes, Raw mango , Shallots, Ladies finger for this sambar.

How to do Arachuvitta Sambar
Heat a kadai with some oil
Add a teaspoon mustard seeds and 1/2 teaspoon of fenugreek seeds.
Once it starts to splutter add a sprig of curry leaves.
Add Shallots - 15 nos
Add a teaspoon of turmeric powder and Salt – To your taste.
Saute – 5 mins
Add chopped tomatoes – 3 nos ( roughly chopped)
Saute – 2 mins
Add the cooked drumsticks and the tamarind extract.
Let it boil till the raw smell of tamarind is gone.
Then add the cooked dal and water as needed.
Give it a nice mix and let it boil for 5 mins.
After 5 mins add the fresh ground sambar masala.
Mix it well.
Turn off the stove after 2 mins.
Add some fresh curry leaves and coriander leaves.
Serve it with hot rice and your favourite poriyal (Don’t forget the ghee)
